Agave nectar and coconut oil stand in for sugar and butter. Whole wheat flour is used in place of bleached flour. The kids are often in a baking mood, and we steer them toward these instead of the usual chocolate chip cookies and brownies. These are just sweet enough for the kids while still appealing to those who don’t like too much sugary sweetness. We usually riff on this recipe, toning down the ginger on the batch for the kids and often using almond milk instead of rice milk since we almost always have almond milk on hand.
