Carrot, apple, and ginger juice is my morning coffee. I create a lot of pulp that usually just goes to compost. This recipe from Feed Your Skull turns the pulp leftover after juicing into very good “donut holes”. These are raw and vegan with no added sugar.
The result.

First, make juice.

Drink the juice. Collect the pulp.

Pack the pulp.

Throw sunflower and pumpkin seeds into a food processor along with cinnamon and nutmeg.

Throw in some Medjool dates and the pulp.

Make the blades go whir until you have something resembling a moldable dough.

Apply some legerdemain to the dough, conjuring balls. Roll some in coconut. Put them in a dehydrator or low temp oven.

Very good stuff.
So awesome to stand here eating one of the leftovers from the original recipe while reading your version! Glad you liked them, I shared the link with the chef. 🙂
