Tomato, Mushroom, and Cucumber Salad

My five year old pulled these three things out of the fridge and insisted we make something with them. These three just happen to make a classic salad, so a little chopping and a quick vinaigrette loaded with crushed garlic yielded dinner. He even had a few bites. He’s more into cooking than eating the result.

If you’re going to let this marinate for awhile you might want to cut the cucumber thicker than I did to avoid sogginess.
