When I have leeks on hand I tend to make either vichyssoise or colcannon. Colcannon won this time.
Steam leeks and kale. Boil potatoes. Mash them together with non-dairy milk. Garnish. I’ve tried soy, almond, hemp, ancient grains, and other milks with this. They all have their charms, but almond is my default.
My second helping might have contained lots of Cholula. 🙂
