Bake tortillas on a Silpat at 350F. Don’t use oil or salt. The tortillas I use require 15 minutes for corn and 20 for wheat to get the right amount of crunch. There’s a sweet spot in between chewy and dried out, although I don’t mind them being a bit chewy. I like tasting the corn and wheat without a glaze of grease. I’d rather get my fat from avocados.
