Okay, this is not the best picture nor my best looking pancake, but it’s hard to get pictures of these because they get eaten as soon as they leave the skillet, sometimes while they’re still on the skillet. Humor we when I say they’re fluffy and good.
- 2 cups of unbleached wheat flour
- 2 tablespoons of agave nectar
- 1 3/4 cups of hemp milk
- 1/4 cup of coconut oil
- 1 tablespoon of baking powder
- 1/2 teaspoon vanilla
- 1 teaspoon of salt, or less
- Fresh fruit to taste
Mix the dry, mix the wet, mix the fruit, plop on a medium heat, un-oiled, cast iron skillet, cook, get loose with maple syrup, eat, rub happy pancake tummy, enjoy the weekend.

where do I find Hemp Milk?
My local grocery store carries hemp milk. Some stores keep it and other vegan milks as well as unfiltered oils in a small refrigerated section near the health food aisle. Whole Foods, of course, carries lots of vegan milks including Hemp.
