Vegan Blackhawk Burrito

Breakfast Club took their awesome Blackhawk Burrito and made it vegan for me. Gone are the eggs, chorizo, and cheese. It is loaded instead with sautéed spinach, mushrooms, tomatoes, and a double down on black beans. The dollop of sour cream made it on the plate as a matter of dollop reflex but was easily ignored. The vegan version maintains that spicy southwestern flavor that makes the original so good.
